FENNEL, PEACH AND WALNUT SALAD


Cheap Recipes : How To Make Fennel, Peach And Walnut Salad

This salad is a perfect accompaniment for fish and seafood.

SERVING : 4

Preparation Time : 10 minutes
Cooking Time : 20 minutes

INGREDIENTS
3 bulbs of fennel
2 peaches
120 g walnuts, shelled
100 ml water
1 tbsp salt
4 tbsp lemon juice
6 tbsp olive oil
1 tbsp sugar
1 bunch of fresh parsley
salt
pepper

1 chopping board
1 sharp knife
1 small saucepan
1 roasting tray
2 bowls - one large, one small
1 spoon

PROCESSING METHOD

Preheat the oven
* Set the oven temperature to 180°C / 360°F

Make the salted water
* Add the water and salt to the saucepan. Heat over a medium temperature whilst continually stirring until the salt has dissolved.

Prepare the walnuts
* Place the walnuts onto the roasting tray.
* Spoon over enough of the salted water to coat the nuts and mix.

Roast the walnuts
* Place the tray onto the middle shelf of the oven and roast for 10 minutes or until the walnuts are completely dry.
* Remove from the oven.

Prepare the fennel
* Cut the fennel bulb lengthways and thinly slice each section. When all the fennel is sliced, place it into the large bowl.

Slice the peaches
* Cut off one side of the peach as close to the stone as possible, then cut off the opposite side and discard the remaining part.
* Thinly slice the peach sections and add to the bowl with the fennel.

Make the dressing
* In the small bowl mix the lemon juice and sugar until it dissolves.
* Add the olive oil and stir well.

Finish the salad and serve
* Add the parsley to the bowl of fennel and peach slices and season with salt and pepper.
* Pour over the dressing and mix everything together.

Serve
* Garnish with the salted walnuts.
